Vinification: Old traditional
way of winemaking in the Tikvesh region. Harvesting is
done in small plastic perforated crates of 20 kg. It
is brought to the winery for processing within an hour
and half at most. Grain separated from the handles with
Italian-made grinder with capacity of 2.000 kg per hour.
Pressing done with manual conventional press with capacity
of 300 kg/h.
Fermentation: In small tanks of 1000 liters. Duration of fermentation 5-8 days. Fermentation temperature 25-30 degrees Celsius.
Alcoholic strength: 13 % vol.

Ageing: 1 year in tank, 2 years in bottle
