Vinification: Old traditional
way of winemaking in the Tikvesh region. Harvesting is
done in small plastic perforated
crates of 20 kg. It is brought to the winery for processing
within an hour and half at most. Grapes are separated
from the handles with Italian made grinder with capacity
of 2.000 kg per hour. Pressing done with manual conventional
press with capacity of 300 kg/h
Fermentation: In small tanks of 500 and 700 liters. Controlled
fermentation temperature with cooling system. Use of
selected wine yeasts for Riesling. Fermentation temperature
13-15 degrees Celsius. Duration of fermentation 10-14
days.
Alcoholic strength: 12 % vol.
Total acidity: g/l 6,3
Ph: 3,3
Extract: 25 g/l
Residual sugars: 5 gr.
Ageing: 1 year in tank, 1 year in bottle
Organoleptic characteristics:
Color: Golden green
Bouquet: Specific for the variety.
Nose: Mix of aromas from peach, strawberry,
citric fruit, green apple and scent of flowers.
Well-balanced aroma, acid, tannin, fruit and sweetness.
Acidity with pleasant, but not overwhelming
tartness.
Flavor: Dry and fresh with a touch of green apple.
